Summer Pasta Salad Recipe

Since theres still a few more weeks still to go (hooray for no snow!) I thought this would be a great time to share a summer salad with everyone!

Summer Pasta Salad

4/3 cup dry fusilli
1/4 cup reduced-fat mayonnaise
1/4 cup nonfat plain yogurt
2 tablespoons apple cider vinegar
1 ½ teaspoons Dijon mustard
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
2 medium carrots, grated
1/2 red or yellow bell pepper, finely chopped
3 scallions, thinly sliced
3 tablespoons chopped fresh parsley

In a medium saucepan, bring 2 quarts of water to a boil. Cook fusilli for 10 minutes, or until al dente.

Drain, run under cool water, and set aside. Meanwhile, whisk together mayonnaise, yogurt, vinegar, mustard, salt, and black pepper.

Add pasta and toss to combine. Gently mix in carrots, bell pepper, and scallions. Refrigerate for at least one hour to allow flavors to blend. When ready to serve, top with parsley.
